One-year-old Rosalie Bay Resort, an eco-luxury and wellness retreat onDominica, continues to grow and expand offerings to guests.

Organic cuisine, romantic dining and cooking classes Herbs, fruits and vegetables from Rosalie Bay’s organic garden highlight the new menus at Zamaan Restaurant. A blend of healthful cuisine, including vegan and gluten-free options, and Dominican favorites entice guests at breakfast, lunch and dinner.

Specialties include: Whole wheat raisin French toast crusted with granola and almonds stuffed with banana for breakfast and Pan seared red snapper served with stewed coconut curry with pumpkin and spinach at dinner.
For a romantic evening, couples can dine over the Rosalie River watching the water rush out to the ocean on the new covered gazebo. The 6-course two-to-share menu begins with a glass of sparkling wine.
Guests who would like to learn to cook healthy at home can take part in Rosalie Bay’s new Organic Cooking Light Class and Tasting. Held privately for a couple or with a small group, each class features
ingredients grown at the resort and instructions from the resort chef. Additional natural treatments at Kalinago Spa.  Kalinago Spa at Rosalie Bay has expanded its menu of natural treatments, inspired by healing ingredients
found at the resort and on the island.

Celebrating 10 years of protected sea turtle nesting 2012 marks the 10th anniversary of the sea turtle protection initiative on Dominica, which was founded by Rosalie Bay owners Bev and Oscar. The effort has expanded beyond Rosalie Bay beach throughout the island. Visitors and locals anxiously await the return of the sea turtles in March to help protect the beaches for nesting and later on, help hatchlings escape into the sea.
Three endangered sea turtles – the Leatherback, Green and Hawksbill – nest at Rosalie Bay from March to October. Guests are invited to participate in educational programs and watch the turtles nest and hatch.

In addition to traditional massages, the oceanfront spa now offers: soothing Hot River Stone Massages, detoxifying Deep Marine Algae Hydrotherapy treatment, renewing Organic Body Scrub and healing Lava Mud Body Wrap.
New services also include Reiki energy treatments, private yoga and Pilates instruction, personal training sessions and life coaching to create a personalized wellness program.

Packages for wellness, pampering and romance
For guests wishing to focus on wellness, the spa or romance on their vacation, Rosalie Bay Resort has added three new packages to provide value.
– Health and Wellness Package includes the organic cooking class, personal training, daily yoga
and pilates, 60-minute massage and 90-minute body scrub and wrap, and a hike to swim in
the nearby Emerald Pool.
– Romance Package includes welcome bottle of sparkling wine, a romantic two-to-share 6-course dinner in the gazebo over the Rosalie River, 90-minute couples massage, 60-minutecouples massage lesson, and guided tour of Victoria Falls with a boxed lunch.
– Spa Package includes 60-minute massage, 45-minute slimming algae hydrotherapy treatment, 75-minute hydrating facial, 90-minute manicure with chocolate mousse mask hand treatment and 90-minute pedicure with reflexology foot treatment per person.

Each package includes five nights in luxury accommodations, private roundtrip airport transfers, daily fresh fruit basket from Rosalie Bay’s organic garden, daily full breakfast at Zamaan restaurant and all taxes and service charges.
