Caribbean Food: My Jubilant Jubilee Dinner Fried Fish

LOL at the title….with all that Jubilee madness….after going out on a Saturday night, having a little bit too much fun..who wants to get up and cook a big Sunday dinner?

Certainly not me….So I made a quick and ‘not so easy ‘light’ meal.  Just enough for a ‘bellyful’.  Fried Fish, Mac n’ Cheese Casserole, Potato Salad and some Pak Choi.  Sounds a lot … but it really isn’t.

I seasoned the fish with salt, fish seasoning, garlic powder, seasoning salt and pimento.  I make slits in the sides of the fish to soak up the seasoning (or because that’s how my Grandma does it), then I stuff the pimento seeds in them.

Before frying, put a 2 pegs of garlic in (well I do it to help me determine when the oil is hot enough …hahaha) and maybe half a pepper.  Make sure the oil is extremely hot.

Now I added something extra…..an onion, about 2 scotch bonnet peppers, sweet pepper, and pimento seeds.  Cook /soak in vinegar for about 5 minutes.
Pour over fish.

For the macaroni and cheese casserole, I was feeling a bit lazy so I used the Kraft Mac n’ Cheese.  After cooking it, I use about three different cheeses (mild cheddar, mozzarella, & uhhhm.. .. Jamaican cheddar cheese) and layered the macaroni in a casserole dish.

My potato salad is done with a boiled egg (I use only the white part) and cooked prawns (the tiny ones…call it shrimp), Mayo, and sweetcorn.  Then I just steamed my pak choi with some butter/margarine…and oh how could I forget my fried plantains which I looooveee soo much … and Voila! That’s my Sunday din din.  Easy Breezy.. .Yummy
